A chilly winter evening calls for a warm, hearty, simple dinner made at home without a lot of efforts. That’s my favourite thing. I love to cook, I adore discovering new recipes, trying new things, but I am all about simplicity and deliciousness at the same time. This coconut spiced prawn curry gives you everything. It’s a real comfort food what we all seek during this cold season. What I like a lot about this recipe, that it doesn’t require many products and most of them I always have in my kitchen, so it was very easy to make it. COCONUT SPICED PRAWN CURRY from Madeleine Shaw “A year of beautiful eating”

serves 2

Cashews 50g
Coconut milk 400ml can
Olive oil 2 tbsp
Cumin seeds 1/2 tsp
White onion 1, finely chopped
Salt a pinch
Garlic 2 cloves, crushed
Ground coriander 1 tsp
Paprika 1 tsp
Turmeric 1/3 tsp
Garam Masala 1/2 tsp
Ground cardamon 1/4 tsp
Large beef tomato 1, chopped
Red chilli 1, chopped
Raw prawns 300g, shelled
Fresh coriander, just for the decoration
White rice 1 cup

– Whizz the cashews and coconut milk together in a blender until smooth.

РHeat the oil in a large pot over a medium heat, throw in the cumin seeds and let them start to become fragrant for a moment. Add the onion and salt and saut̩ for 4 minutes.

– Add the garlic, coriander, paprika, turmeric, garam masala and ground cardamon to the onion, stir well to coat in the oil, then add the tomato and red chilli. Stir and cook for a few more minutes, then pour over the coconut and cashew mixture.

– Leave the curry to cook 5 minutes in the nutty coconut milk, then add the prawns. Cook for a further 3 minutes until the prawns turn pink. Serve with white rice or any other rice. Sprinkle some fresh coriander leaves and enjoy!
